Healthy Egg Salad



My dad and I are huge fans of egg salad, so when I saw a recipe for egg salad with Greek yogurt instead of mayonnaise I knew I had to try it.  My dad wasn't too convinced but still tried it and even liked it. You really can't tell there's yogurt instead of mayo.

I usually only make my egg salad with eggs, mayo, salt and pepper. The recipe I found had a few more ingredients and I branched out.  I never measure when I make egg salad but I'll put them here in case you don't know where to start.

What you need: 
6 eggs
1/4 cup 2% Greek yogurt
1/2 Tbsp Dijon Mustard
1/2 Tbsp Classic Mustard
1 Dill Pickle Spear (I love them in egg salad although not many people do)
Pepper and Salt

  1. I'm excited to try this. My boyfriend likes egg salad, but I've never been a fan. This, however, sounds awesome! And yay for pickles!! =D

  2. We usually use pickle relish (already chopped up!) Yogurt sounds healthier, gotta try!!
